This is pretty cool.
In this video I found, the host goes behind the counter of what it's like to run a local sushi restaurant in Tokyo.
And it's more complex than I originally thought...
The amount of preparation before any rice has been made is insanely tedious...

What part of the video struck you the most?
For me it was two things.
First it was how awesome that this restaurant runs through the family and is now soon going to be with it's 6th generation owner!
And 2nd was how precise and efficient their operations are run in such tight quarters!
