Japanese Gourmet Train Food

I really think this concept will totally work in North America.
In Japan, they have this thing called Ekiben, which is essentially freshly made bento boxes that you purchase to eat on your train ride.
Instead of the usual fast food we get in North America, why not provide high quality fresh locally made meals from locally farmed ingredients for your train meal?
And I'm not talking about just sandwiches...I mean really good meals at good prices.
